A vast treasure of previously neglected vineyards has been revived (principally with the help of yours and my money via the EU) in northern Spain. This was an old co-operative cellars that is now in private hands and much work has been done on cleaning up the vineyards and completely rebuilding the cellars. Modern wine making techniques are now applied to the fruit of ancient vines with more than satisfactory results.

NV Assero Bio Brut, La Mancha
Made from 100% Airen by the Bodega San Isidro near Toledo. Unusually the fermentation of this organic sparkler is limited during the secondary fermentation by cutting down the amount of yeast available to the natural sugars and the effect of this is to retain a low alcohol level and a soft, full flavoured palate.
