The Clos de Caveau estate lies amid woodland below the shattered peaks of the Dentelles de Montmirail because it was isolated and thus perfect for organic cultivation. 40 year-old vines and severe sorting keep yields very low indeed.

This was the first time we had a one-to-one tutoured tasting at Las Cases, but it wasn't this that made us buy their Clos du Marquis. It was the fact that the wine was extraordinarily pretty, and I just can't wait to drink it in 15 years time. Valençay is a tiny 130 hectare cru in the heart of the Loire where the vines are planted on the sand and flint slopes to the south of the Cher River. A blend of Sauvignon Blanc and Chardonnay, the wine was matured on it's lees to add depth of flavour and a very light natural spritz.
