Beatrice and Jean Claude Bouche, owners of this domaine, are impassioned wine-makers. Together they manage their vineyards using organic farming methods, creating wines of great character. Just to the east of Orange the Domaine du Vieux Chene vineyards spread out on a slightly sloped and very rocky plateau. This location offers the wines the benefit of a beneficial microclimate thanks to an especially high yearly level of sunshine.

An world renown estate that consistently makes wines of remarkable quality. The vineyards are managed on biodynamic principals and they and the cellars are overseen by the meticulous Anne-Claude Leflaive who has had the good fortune to inherit some of the best vineyard sites in Puligny.
One of the vinous delights of the Loire Valley. Like a grand Vouvray, this has quince, limes and honeyed tones - beautiful intensity of ripe Chenin Blanc.
Owned today by Jean-Claude Mas, this well established domaine has 25 hectares of vines in the Terrasses du Larzac area. Here in the foothills of the Montagne Noir, the soils are of limestone, clay and large pebbles, and are reminiscent of those of Châteauneuf-du-Pape. An intense shade of purplish red with ruby hints. The nose offers notes of mocha and liquorice amidst the dark berry fruits. The palate more info >>
Jean-Claude du Roure, the current owner, took over the vineyard from his parents in 1985. Respecting the land and the environment, he runs his vineyard on the principles of well planned effort and sustainable cultivation of the vines, limiting the use of pesticides, allowing the growth of grass, and using bark to keep down the growth of weeds.
Valençay is a tiny 130 hectare cru in the heart of the Loire where the vines are planted on the sand and flint slopes to the south of the Cher River. A blend of Sauvignon Blanc and Chardonnay, the wine was matured on it's lees to add depth of flavour and a very light natural spritz. Crisp, fresh and attractively complex with aromas of white fruits and flowers.
The Coteaux du Layon: small, steeply-sloped valleys bordered by the Loire, and slightly less majestic River Layon. Chenin Blanc grapes are used here to produce styles from subtly off-dry to overtly sweet ('noble rot' shrivels grapes to raisiny succulence). Domaine des Forges is in Chaume, famed for luscious 'moelleux' styles. This delicious wine, a fine balance of nectar-like sweetness and fresh, peachy acidity, is recommended drinking with foie gras.
At their rustic Ampuis estate (where the eggs from happy free range chickens are used to filter wines), Jean François and Carmen Garon have been producing old-fashioned, gently-oaked, full-bodied Côte-Rôties since 1995. Soft and well-rounded, with subtle concentration of black fruit flavours, this appealing style is lovely with pan-fried duck breasts.
The fruit for this comes from three small parcels of vines, the oldest being En La Barre which was planted between 1953 and '56, and is supplemented by wine from the young vines of Clos de la Barre, Genevrières, Goutte d’Or and Charmes.
Bordeaux Sec par excellence: a full, dry, gently honeyed palate with refreshing citrus at the finish. This is small family-run farm on low hills of chalky clay south of St.-Emilion and north of Sauternes in the rolling Entre-Deux- Mers region.Wine college graduate Régis Chaigne is relatively new in his role as cellarmaster, but only has to nod towards the medals he's received to reassure father Jean- Claude, manager of the estate's vineyards or over 45 years.
Ancient vines of which 80% were planted in 1953 and the balance in 1972, by the Morey family. This three-quarters of an acre site produces pitifully low yields (20 – 35 hectolitres per hectare), but the health of the vines has improved dramatically since Dominique took this into biodynamic cultivation. At the very southern end of Le Montrachet, facing south, the wines are usually quite high more info >>
From the outstanding 2000 vintage and scoring 94-6/100 Parker points "The awesome hedonistic corpulent 2000 Chateauneuf du Pape Le Secret des Sabon boasts dazzling aromatics supple flavor purity and a long finish. The wine lingers on the palate for nearly a minute which gives readers an idea of just how deep and thick it is. It is a tour de forces in winemaking. What a shame so little is produced." more info >>
We tasted our favourite southern Burgundy from Jean Thévenet's modest domaine in Mâcon-Clessé at the onset of its fermentation in Autumn 2006, and it is probably still bubbling gently as I write, such is the unhurried manner of his winemaking. This is the second wine of Château d'Aussières, an ancient Languedoc property, which was revived by Bordeaux powerhouse Domaines Barons de Rothschild in 1997. Dark violet-tinged red in colour, with the classic Corbières aromas of garrigue shrubs and a persistent finish reminiscent of black olives.
Domaine de la Bongran is one of Adnams most favoured estates. Why? Because year after year the Thevenet family produce stunning wines - totally unique in style and incredibly generous in flavour. Each wine takes months, if not years, to fully ferment. The grapes are late-picked, and the winery philosophy is totally unhurried. The wine is ready when it wants to be - not when the winmakers dictate. Truley fantastic stuff.

Domaines Barons de Rothschild took over the Los Vascos ('The Basques') estate in 1988, and since then have grown it from its original 220ha of vines to 580ha. Many of the original vines are 40-50 years old, with the oldest being up to 70 years old. Classic and pure Cabernet, with well-defined notes of cherry, blueberry and plum on the nose, with hints of bay leaf and clove adding subtle depth. Approachably soft yet weighty on the palate. Partner with roast beef or fillet steak.

The Danachet family have been running this estate in southern Burgundy for four generations. The latest encumbants are Robert, Corinne and their son Benjamin. They converted their vineyards to organic cultivation in 1979 and mix traditional values with modern winemaking. Their Macon - Péronne comes from a 4.5 acre vineyard with vines of an average age of 50 years. The grapes are harvested by hand, more info >>
